Cheese enchiladas
Today we served cheese enchiladas. We offer green tomatillo sauce or red enchilada sauce as a topping. We served pinto beans on the side as well as blue corn chips. The strawberries are delightful right now and wow did the students enjoy them.

Today we served pasta with sauce. We have found that long spaghetti is very hard to serve when serving this many people so we use a short pasta called gemelli.
The sauce as always is made by us. The smell of fresh garlic can bring in lots of curious visitors inquiring about lunch. Roasted broccoli was the side dish.

roasted veggie pasta
Today we served roasted veggie pasta. YUM.
So after serving McGillis students lunch for about 12 years, I have noticed that kids change their eating patterns with the seasons and spring is a time when they start to eat lots of food.
I am not sure if its part of the spring fever process but its amazing how much food they have eaten these past few warm days. They just can't get enough. We try to make kid friendly options at the fruit and salad bar and give them a hefty serving of the main entree.
When it gets really warm out then the students cut back on the food that they eat, until then we will try to meet their needs.

lomein noodles and eggrolls
Today we served lomein noodles and egg rolls. The noodles are mixed with lots of veggies like broccoli, cauliflower, celery, green onions, carrots and cabbage. The egg rolls are filled with veggies as well. Oranges and sliced apples were options today. The salad bar had an asian theme today with edamame, crunchy noodles and a wonderful tangy asian dressing.

Thursday Tomato soup and grilled cheese sandwich
Wednesday pizza again
Today we made 450 Hamentaschen cookies for Purim tomorrow. So we served pizza because it is the easiest entree to serve while we made the cookies. Fresh strawberries and yogurt were the side dishes. Hamentaschen cookies are a labor intensive cookie to make!
Ask your child why the cookie is shaped like a triangle.

Family group lunch
WOW is officially over and we start family group lunches today. Today our specialty sandwich is Greek veggie wraps as well as peanut butter and jelly, turkey and cheese sandwiches.
It has been six weeks since we have had family groups and I am sure we will all be a bit confused.
I am so appreciative that this year we were allowed to stop family group lunches during WOW.
Two sack lunches are just not ideal. Most students and parents that I talked to agreed.
Next week the specialty sandwich is chicken burrito. A clear favorite. Yum

Friday Chicken tenders
Wednesday vegetable soup and grilled cheese
Today we served vegetable soup and grilled cheese. Some how we have magically pre planned soup to be served on cold and wintery days.
The vegetable soup is popular, but with a grilled cheese who does not like vegetable soup?
A student asked me what brand of soup it was so that he could ask his mom to buy the same kind.
Although I was glad he liked the soup, I was disappointed that he did not know that we make our soups from scratch here at McGillis. We absolutely make all of our soups and sauces from scratch. There are a few quality pre made soups and sauces but we think our own is better!
