Today we served bean and cheese burritos, spanish rice was the side dish.
Grapes and apples were offered. A black bean and corn salad was offered at the salad bar.
Green salsa was offered today along with the usual tomato salsa.

Chicken Noodle Soup

Today we served chicken noodle soup, the vegetarian option was vegetable soup.
We served garlic bread instead of our usual baci roll. It was a popular lunch.

Mac and cheese


Today we served macaroni and cheese. Plain pasta was also available.
Perfectly steamed broccoli was the side dish as well as orange and apple slices.
The salad bar was a popular place today as it always is. Hominy is a new fave.

Edamame Corn chowder


Today we served Edamame Corn Chowder. Most of students really enjoyed it.
A few crackers seemed to be the right companion and of course the best part was strawberries.

Wednesday cheese tortellini

Wednesday we served cheese tortellini. We made a creamy tomato sauce as an option.
Perfectly steamed green beans were served as a side dish. These are naked save for a bit of salt.
Katherine made a treat in honor of the hundredth day of school..... chocolate cake.
Every bit of the yummy sauce was eaten before I could take a pic so instead of the picture I thought I would give the recipe for a quick sauce.

3-5 Tb. extra virgin olive oil
4 Tb minced garlic
2 (28 ounce) cans of good tomatoes chopped
4 ounces cream or 1/2 and 1/2
2 Tb dried Italian herbs

Add oil to a large saucepan, heat on medium add garlic, cook til garlic is golden about two minutes, but do not burn.
Stir in tomatoes, bring to a boil then turn down heat to a simmer for 20 minutes.
Add the cream and herbs stir until blended. Simmer til this thickens add salt and pepper to taste

Tuesday cheese quesadilla

Tuesday we served cheese quesadillas with the option of veggies added to the quesadilla.
Red and green bell peppers, onions and sliced mushrooms were grilled and offered as an option to plain cheese quesadilla.
Spanish rice with veggies was offered as a side dish.

Monday chicken teriyaki


Monday we served chicken teriyaki, edamame and pineapple.
Very popular lunch. Lots of students order everything in the side.
Some students do not like things on their tray to touch each other.

Lentil soup recipe

SO MANY PEOPLE HAVE ASKED FOR THIS RECIPE, I DECIDED TO GIVE IT TODAY.

Lentil soup
5 Tb olive oil
5 large onions diced
5 large carrots diced
20 cloves of garlic
25 plum/roma tomatoes
10 tsp. dried tarragon
5 tsp. dried thyme
5 tsp. paprika
30 cups of water or stock
10 cups french green lentils
10 bay leaves
10-15 tsp. salt
fresh ground pepper

Preheat large soup pot over medium heat. Saute onion and carrot in olive oil for about ten minutes until onions are brown.

Add garlic, tarragon, thyme, paprika and saute for two to four minutes longer, add tomatoes
and a bit of water to deglaze the pan, stir til brown bits are dissolved into the liquid.

Add the water or stock, lentils and bay leaves, add the salt and pepper to taste.
Bring to a boil, then simmer for 45 minutes to an hour til all is tender.

Today we served beef stew, the vegetarian option was lentil soup.
I am so happy that so many students chose the lentil soup.
Baci rolls were served as well.

Sloppy joes


Today we served sloppy joe sandwiches, veggie burgers were served as the vegetarian option.
The side dish was roasted potatoes. The sloppy joes are really tasty. Do not tell anyone that they are full of onions peppers and celery. This pic does not show salad or fruit bar options.

chicken pot pie

Today we served chicken pot pie. Veggie pot pie was also offered.

Chicken pot pie is an interesting dish to make when you cannot mix meat and dairy (kosher rules).
Instead of butter and milk to make the gravy sauce I use margarine and soy milk.
I have tried to do this using real dairy and vegetarian meat and we all agree that real chicken is the way to go.

WOW LUNCHES

During WOW we serve lunch in a similar manner as Family Group Lunch is served.
The students are all heading to different venues for WOW and most are eating on busses.
The students choose a sandwich.
Sandwich options are tuna , turkey, cheese, hummus and veggie pita.
String cheese, juice and sunchips, as well as apple slices are included.
All students (even home lunch students) going on a bus are included in the WOW lunch, this way if lunches are forgotten the students will be fed.
We even pack water bottles just in case someone forgets their own.
A snack for the ride home is always included.
Now we just hope that the snow is plentiful.

vegetarian chili beans


Today we served vegetarian chili beans.
Black, white and pinto beans are the base of this soup.
A sprinkling of cheddar cheese and a few corn chips make this a favorite.
Cornbread, pears and yogurt were the sides.
Believe it or not lots of students came back for more chili.
