VEGETABLE SOUP

Friday   02/01/13  we will serve vegetable soup.  This soup is delicious and full of lots and lots of veggies. Most students really like this soup. We try to persuade students to try something before they decide that they do not want it. This is usually not hard with soup because the reward for liking the soup is a baci roll.  Baci rolls are like gold here in the lunch room.

Egg rolls and veggie lo-mein

Today we served egg rolls and veggie-lo-mein noodles. This is a popular lunch with most of the students.  Broccoli, cauliflower carrots, cabbage, celery and green onions are tossed with the noodles.

MAC AND CHEESE

PLAIN PASTA IS ALWAYS AN OPTON.  ROASTED BRUSSEL SPROUTS  WERE SERVED AS A SIDE OPTON.  THIS SAUCE  I  MAKE MYSELF AND IT IS YUMMY.

MONDAY WE SERVED CHICKEN POT PIE. THE VEGETARIAN/VEGAN OPTION WAS GARDENERS PIE.   FOR YOUNGER CHILDREN THIS WAS NOT POPULAR,  FROM THIRD GRADE UP THEY SEEMED TO REALLY LIKE IT.  WE ASK THAT THOSE THAT DO NOT LIKE SOMETHING TRY A BITE  THE FIRST TIME ITS SERVED AND THEN MAKE A DECISION.

Sloppy Joe sandwich

Sloppy joe sandwich will be served today.  This recipe is filled with carrots, celery and bell peppers along with the ground beef.   Roasted red potatoes were the side for a hearty warm lunch on this icy day.

Thursday 1/24/13 WOW #1

                                               WOW  lunch Thursdays

As you know the students are off on adventures today.  Lunch is fun on these days.
Students ordered their sandwich choice in advance, and their lunches will be eaten on the bus. Sandwich choices for WOW lunch include hummus, cheese, turkey, tuna.
The hummus sandwich is especially great this year.  I will add have some type of fruit to the lunch as well as string cheese and chips.

Garlic spaghetti and steamed broccoli were served today. Your child might need a mint for the ride home from school today.

Today was the perfect day for chicken noodle soup.   The students love this soup and they should, it is delicious.  This soup takes two days to prepare.  The vegetarian option was lentil soup. Baci rolls were served with the soup. Salad bar offerings are popular.  We have found the most unpopular item on the salad bar to be hominy. The most popular would be olives.  We will continue to try new items.

pizza

Friday is pizza day.  Pizza is the most popular lunch that we serve. Tossed roasted veggie salad will be served on the side.  The once a month treat will be served today, it is cake with chocolate frosting. Please understand that this is just that , a treat.  I believe that sweets should be so sparse that they really are treats. I believe that treats should be made from scratch and delicious.

cheese enchiladas

   
Cheese enchiladas and Spanish rice are on the menu Thursday. The enchiladas pictured are dry without sauce, but some students prefer tomatillo or red chili sauce.  The enchiladas are filled with a mixture of cottage cheese, cheddar cheese and sour cream.  We hand roll about 46 dozen of these.  Lots of work, but I am really fast at it after all of these years.

pasta with marinara

Wednesday we will serve pasta with marinara sauce.  This sauce is from scratch and delicious. Parmesan cheese is offered as a topping.    Roasted cauliflower and or broccoli will be served as a
side to the pasta.

vegetarian chili beans


On this frozen day we served vegetarian chili beans.  This was a perfect day to have warm, hearty chili.
Cheese and fritos are toppings for the bean chili, and most of the students love this chili.

The salad bar is a popular place in the dining hall.   Younger students prefer olives, croutons and cheese, but will eat  beets, green peas and peppers if asked to choose a vegetable.

Monday family group lunch

           Monday we will serve BBQ beef sandwich.  This is a popular lunch.    
Family Group Mondays are fun for the students and a nice change for us in the kitchen.
I have tried to make family group lunches a hot entree as much as posssible.
Besides the sandwich wich they preorder, they are offered a string cheese, some fruit, milk, a chip or cracker  type of snack.

Beef Stew

Snow and bitter cold make it a perfect day for beef stew. This is a two day process and it is worth the extra work.  As ususal we will serve a vegetarian option, today that option is tomato soup.

FISH TACO/ FISH STICK

                                            FISH STICKS OR FISH TACOS?

This is the first question your student is asked today in line. Next question, Spanish rice, bean salad or both?  If tacos are chosen we will ask if they would like mango salsa, or coleslaw or both?
The students seem to like the tacos dressed with the mango salsa and the coleslaw.

Bananas, and oranges are the only fresh fruit that I can get right now, so we added canned in water pears and peaches to the fruit bar.   Salad bar is a popular place as well, we encourage the students to get fruit and salad daily.

Pasta with roasted veggies

Wednesday we will serve pasta with roasted veggies.  Roasted tomatoes, red onions, mushrooms, cauliflower and brussel sprouts are tossed with the pasta, then a light goat cheese sauce is mixed in.
Do not worry, plain pasta is offered but still a bunch of students opt for the veggies.

Potato Cheese Soup

Tuesday we will serve Potato Cheese Soup. This is a great soup, very hearty and perfect for this cold weather.  Potatoes, milk, spices, broccoli and sharp cheddar cheese are the only ingredients in this soup.
It is served with a baci roll and the option of fresh chopped green onions. Yummy.

Greek Chicken Wraps

It is family group Monday and the specialty sandwich today is Greek Chicken Wrap.
This is a tomato basil wrap filled with marinated chicken and lemon rice and then
veggies like tomatoes, olives and spinach.  This is a popular option today.
As usual we have peanut butter and jelly, turkey or cheese sandwiches available.
Besides the sandwich we will serve milk, string cheese, clementine oranges and chips.

Hot dogs

So its Hot dog day.  I know that hot  dogs are not very popular with the faculty.  As a vegetarian I share the sentiment of the faculty and I do not serve hot dogs very often. Students really like the hot dogs and seem to think of them as a once in a while food rather than something they should eat daily.
Other entrees on this once in a while list might be pizza or chicken tenders.

To balance this high fat meaty entree,  I always have a vegetarian option such as veggie dogs.
Today I will serve lentil soup as an option.

baked potato bar

Baked potato bar day is a lunch full of options.  The first question is regular or sweet potato.
Next comes all of the toppings.   Options include mushrooms,  steamed broccoli,  cheese,  carmelized onions,  sour cream  green onions and or salsa.  This is a popular day.  I bake 240 pounds of  potatoes.
I steam 35 pounds of broccoli,  carmelize 20 pounds of onions, saute 20 pounds of mushrooms.

So glad to be back from winter break. Today was a perfect day to serve soup. Students always seem to have huge appetites after a break. We stock the salad bar extra full and have extra fruit prepared.
Students are allowed to have additional servings of soup, but not grilled cheese.
