Chili Beans

I got called away with sick kids, so no picture was taken today. We had a similar lunch a few weeks ago, but this time instead of the cornbread they had a cheese quesadilla. It was also served with a salad.



We make four of these huge pots of chili! The recipe is the one and only recipe listed so far, so check it out.

Caprese Sandwiches



Today is Monday, so it is family group lunch day. The choices were the usual PBJ, cheese sandwich or a caprese sandwich (which is fresh mozzarella, tomato, fresh basil and balsamic vinegar). The sandwiches were served with an apple, an individual cheese and Baked Lays.

Chicken and Rice



Nearly everyone who walked passed the lunch tables today, exclaimed, "Ooo..my favorite lunch." We do hear this a lot, particularly on chicken days, but it seems everyone loves chicken and rice.
We served the chicken and gravy over basmati rice with a steamed broccoli and orange wedges. The oranges are great right now!

Spaghetti



Today we had spaghetti. We have found it's easier to use these smaller noodles this year instead of spaghetti noodles. They're easier to mix with sauce and serve in the limited time we have.
The spaghetti was served with ice cream (lunch hero request), strawberries and a spring mix salad with cucumber, tomato, carrot, croutons and a little parmesan cheese and ranch dressing.

"Meatball" Subs



This was the second pick of the lunch hero. As the lunch hero he got to pick the main entree and had input into the sides and a special treat for the week. These are our meatball subs. We use a vegetarian sausage patty. Not only is kosher meat hard to find like this, we also find the kids like to have cheese on these as well.
These sandwiches were served with basmati rice as requested, a half banana and roasted cauliflower and carrots.

Chicken Salad Sandwich



This is the start of the lunch hero week and also family group Monday! Today we had chicken salad sandwiches, clementines, mixed chips, and a laffy taffy candy. You might notice we don't have a lot of treats and when we do they're usually freshly baked and really great. This was a special lunch hero treat!
