Cheese Enchilada

Wow, today was especially crazy and I can't figure out why.

...which is my excuse of why I didn't take a picture...again...

Oddly, we had the same sides down the the banana. This time we added a salad as well.
The enchiladas are pretty plain, but we do serve some sauce on the side. Sauce which today we made from scratch!
